The Funayuki Deba knife is a lighter, thinner version of the traditional Deba knife, designed specifically for fileting and butchering whole fish. Originally used on boats to filet smaller fish, the Funayuki retains the precision and durability of the Deba while being more maneuverable and versatile. This knife is also excellent for chicken and meat, but it is not recommended for cutting through large bones.

Our handmade Yoshihiro Kasumi knives are crafted with extraordinary care by our master artisans, offering both exceptional craftsmanship and performance at an excellent value. Made from White Steel #2, with a Rockwell hardness of 62, the blade is forged with iron to create the distinctive Kasumi mist patterns, ensuring both beauty and performance.

The Yoshihiro Kasumi knives are complemented with a traditional Japanese-style handcrafted Magnolia wood (Octagonal-Shaped) handle, affixed with a Water Buffalo horn bolster, offering superior durability and balance. Each knife also comes with a protective wooden Saya sheath, preserving the blade when not in use and enhancing its elegant appearance.
