These knives, made from Aoko Blue Steel #2, exhibit a hardness of 65 to 66 on the Rockwell scale. The steel is heated in furnaces that reach extreme temperatures, then quenched in cool water for added hardness and polished to a brilliant mirror finish, resulting in knives that blend aesthetics and performance seamlessly.
